Preparation Time: 15 minutes
Cooking Time: 25 minutes
Total Time: 40 minutes
Servings: 4

Ingredients:

1 quart of Cobros Chicken Bone Broth
1 onion, thinly sliced
3 cloves of garlic, minced
1 carrot, julienned
1 cup of diced mushrooms
1/2 cup of sweet corn kernels
200g rice noodles
2 chicken breasts, thinly sliced
1 fresh chili, thinly sliced (adjust to taste)
2 tablespoons of mirin
2 tablespoons of soy sauce
Salt and pepper to taste
Fresh spring onions for garnish

Instructions:

In a large pot, heat a tablespoon of oil over medium heat. Add the sliced onions and minced garlic, sautéing until fragrant and translucent, about 2-3 minutes.

Pour in the Cobros Chicken Bone Broth and bring it to a gentle simmer.

Add the julienned carrots, diced mushrooms, and sweet corn kernels to the pot. Allow the vegetables to cook for about 5-7 minutes until they are tender yet still slightly crisp.

While the broth is simmering, cook the rice noodles according to the package instructions. Once cooked, drain and set aside.

In a separate pan, heat another tablespoon of oil over medium-high heat. Season the sliced chicken breasts with salt and pepper, then add them to the pan. Cook for 3-4 minutes on each side until golden brown and cooked through.

Once the chicken is cooked, add it to the simmering broth along with the cooked rice noodles.

Stir in the mirin and soy sauce, adjusting the seasoning according to your taste preferences.

Allow the broth to simmer for an additional 5 minutes to allow all the flavors to meld together.

Serve the Chicken and Rice Noodle Ramen Style Broth hot, garnished with fresh chili slices, cilantro, and green onions.

Enjoy the comforting warmth and nourishment of this delicious dish, made with love and Cobros Chicken Bone Broth.
