Today, we're thrilled to share a mouth-watering recipe straight from the kitchens of the Cobros brothers themselves – a Mushroom Risotto that not only tantalizes the taste buds but also incorporates the goodness of our signature Cobros Chicken Bone Broth.


Ingredients:

  • Onions and garlic (chopped and sweated with a little olive oil)
  • 1 tbsp of olive oil
  • Fresh chopped thyme
  • White wine
  • Cobros Chicken Bone Broth (1 tsp per person) mixed with 100ml of boiling water
  • Arborio rice (75g per person)
  • Chestnut mushrooms (chopped, 100g per person)
  • Spinach (roughly chopped)
  • Shitake mushrooms (fried in a little butter, for topping)
  • Fresh parsley (for garnish)
  • Salt and pepper (to taste)
  • Fresh single or double cream (a splash or two)
  • Freshly grated parmesan
